Mango Turmeric Energy Bites

I served these energizing little bites after the RIDE to Conquer Cancer charity ride - totally delicious and fantastic for a post ride recovery food.  Turmeric, goji berries, rose hip powder and hemp hearts are anti-inflammatory and aid with muscle recovery.  Enjoy as an afternoon snack to thwart off low energy or pack a few of these bites in your lunch.


Makes 20


1 cup dried mango

1/4 cup goji berries

1 cup cashews

3 tbsp hemp seeds

3/4 cup unsweetened dried coconut

1.5 tsp turmeric

1 tbsp baobab fruit powder

1 tsp rose hip powder

zest and juice of 1 lime


Blitz goji berries, mango and cashews in food processor by pulsing a few times until finely chopped.  Slowly add remainder ingredients while motor is running to form a loose ball.  Divide and roll into 20 balls, coat with finely shredded coconut.  Place in refrigerator for an hour for freeze for 20 minute until firm.
